Originally composed as a commissioned score for chef Jordan Kahn's two-Michelin-star restaurant of the same name, 'Vespertine' is a work of pure environmental music. The album largely eschews the band's typical rock dynamics in favor of calm, ethereal ambient drones and mellow, introspective textures.
